Savoy cabbage is a premium winter brassica exported from Spain, although in lower volumes than white cabbage, broccoli, or cauliflower. Spain is an important supplier to Northern Europe during the winter months, with production concentrated in Murcia, Navarra, Castilla y León, Valencia, and La Rioja. Savoy cabbage is valued for its crinkled leaves, sweet flavour, and tender texture, making it popular for fresh consumption and cooking. The season starts in September and lasts until April, with limited availability during the summer season from cooler regions.

Savoy cabbage is marketed mainly by head size, rather than by variety. Spanish growers mainly use F1 hybrids selected for attractive dark green colour, fine leaf blistering (crinkling), dense heads and good shelf life.
Main varieties are Melissa F1, Alcosa F1, Famosa F1, Vertus F1, Wirosa F1 and Resolution F1.
