Spain is one of the largest onion producers and exporters in Europe, supplying fresh onions almost year-round thanks to a combination of early, main-season, and long-storage varieties. Spanish onions are exported throughout Europe and to overseas markets due to their excellent quality, large bulb size, and long shelf life. Production is concentrated in Castilla-La Mancha, Castilla y León, Andalucía, Valencia, Murcia, Aragón, Navarra, and Catalonia. Main harvest season from June to August; stored onions are then available until May.
Varieties
Yellow onion
Bronze to golden brown skin, white flesh and medium to strong flavour. Largest export category. Varieties like Medusa F1, Vision F1, Dormo F1, Hybound F1 and Sherpa F1.
Red onion
Skin is dark red-purple, flesh is white with red rings, taste is mild to medium. Premium retail. Varieties like Red Baron, Red Tide F1 and Redlander F1.
White onion
White skin and flesh, mild taste. A smaller export category, mainly for fresh market & processing. Varieties like White Wing F1, Carta Blanca and Nevada.
Sweet onion
Light golden skin, mild and very sweet flavour. Premium segment. Varieties like Fuentes types and Babosa.
Spring onion
Small bulb, long green leaves and mild taste. Niche fresh market.
