Spain is the largest exporter of fresh cauliflower in Europe, supplying supermarkets mainly during the autumn and winter months. Production is concentrated in Murcia, Navarra, Valencia, Castilla y León, and La Rioja, allowing almost year-round availability, with the peak export season from September to May.

Varieties

Cauliflower varieties can be classified by curd colour, growing season, and market use. For the fresh export market, white hybrids dominate (>90% of production), while coloured cauliflowers are niche products.

White

The most common type grown in Spain and exported throughout Europe.

Purple

Popular in gourmet and premium retail markets. Purple curd, high anthocyanin content, turns greener when cooked.
