Fresh parsnip is a smaller but growing export vegetable segment in Spain. Although countries like the UK and the Netherlands dominate overall European parsnip production, Spain has an advantage in supplying early and winter-season fresh parsnips when northern climates are limited.

Spain mainly grows white-rooted European parsnip types, characterised by a long tapered root, creamy-white skin, sweet flavour and good storage capability. Mainly used for wholesale export, supermarket retail and processing. The traditional export type is Hollow Crown, but there are also varieties such as Gladiator F1, Albion F1, Tender and True, and Baby Parsnips.
